As I Promised.....Here Is The Recipe!

There is just something.......
about fresh lemons......
and a pie crust.........

that makes me throw all thoughts of weight and health issues out the window.
............PIE........
I love pie....any kind, any crust, any place, any time! And judging from all of your wonderful comments about the recipe on my last post......I think you might feel the same....maybe not as overboard as I, however. {:
And I am going to post the recipe right here instead of making you hop back and forth from this blog to my cooking blog. After all...country living is also about country cooking...
am I right?
This is such a easy and creamy pie. I made this with a meringue topping, but if you want it easier, you can just use cool whip.....but I must say......the meringue topping is so worth the extra work...it makes the taste of the pie....so here you go, everyone......
Creamy Lemon Meringue Pie
Preheat oven to 400.F
Filling
4 large lemons(used for zest and juice)
1 Tbs. lemon zest
1 /2 cup of lemon juice from fresh lemons
2 egg yolks (save the whites for the meringue topping)
1 14oz can of sweetend condensed milk
1 graham cracker crust
Mix lemon zest, lemon juice and egg yolks in mixing bowl. Add condensed milk and mix on high until well blended and thick. Pour mix into crust.
Topping
2 egg whites at room temperature
1/4 tsp. cream of tarter
1/4 cup sugar
1/2 tsp. vanilla
Beat egg whites and cream of tarter until foamy. Beat in sugar, one tablespoon at a time, continue beating until stiff and glossy. Beat in vanilla. Do not under beat
Spoon topping onto pie, making sure edges are covered and sealed. Bake in oven until delicate brown for about 10 minutes. Cool away from draft. Enjoy!

This sounds and looks so delicious.....I'm a pie person too and I going to make this for sure. I love lemon and cherry too but my #1 favorite is apricot, yum. For my birthday we had cherry...hugs, Linda

I DO make a mean coconut cream pie. It's my favorite, but I don't make it very often. None of us need pie, but ya know, ever once in a while you just gotta have a pie!

The baby booties are beautiful, if they were given to me for my baby, I would frame them after baby outgrew them.

My favorite pie is cherry, but it has to be a good home baked pie. I have never tasted a store bought cherry pie worth more than eating one piece. But give me a good home baked one and the whole pie is MINE!

I'm totally makin' this one. I love lemon pie. I find that as I get older (and older and older...) I become more and more partial to pie. It's funny, but as a young un I didn't particularly like it except for pumpkin which has always been one of my favorites. But lately...I'm lovin' it! Thanks for a new recipe to try! C

Nancy and for all the others who ask, you still need to bake the pie because of egg yolks. Bake it at 350 for about 15 minutes. Sorry, I should have thought about that! blessings,Kathleen

Lemon anything but pie....it's out of this world!! Your pie looks like perfection. (I use an Criso recipe for my pies).
The baby booties are adorable. My mother made them for me and I still have them...somewhere. I must dig them up!
