My most wonderful baking companion

Through all of the years I have cooked and baked, I have found buttermilk to work miracles, where just plain milk would most commonly do. I use it to make the best, Texas size biscuits, for dipping chicken into before the flour mixture and for baking wonderful desserts such as............
this creamy Buttermilk Pie. I have turned into a "late evening foodie" where I start baking and making late evening meals with fresh breads and desserts. Tonight I made chicken fried steak (even though in my previous post, I swore I was not making this after a day of work with it) {: Fresh blacked eyed peas from the garden, macaroni and cheese, Mexican cornbread, and for dessert, this pie. Hi Kathleen, My mom loved cornbread better than anything and I made it often for her (with buttermilk). I also make a congealed salad with buttermilk - the recipe is a few posts back.
Your fresh black-eyed peas sound so delicious to me!

My Mama cooked with buttermilk, and I did not know that you could cook any other way! It has been a staple in my kitchen as long as I have had my own kitchen!
The mexican cornbread looks soooo good--I'm really hungry now!

Never thought of it, Kathleen, except when a recipe calls for it! I do make buttermilk pie, tho. I'm re-thinking this, too. I think Buttermilk will have to be a staple in my fridge from now on! I'm glad you shared this today.

You are amazing, friend, to cook all day and then come home and cook some more. But... that home cooking was for your hubby and you, and that makes a big difference, doesn't?????

I just can't make pancakes without buttermilk - and a chocolate buttermilk cake -YUMMY. I think too many people think they won't use it up but a weekend or two of pancakes or waffles made with buttermilk and maybe a pan of cornbread - and off to the store for more!

Goodness Kathleen, that pie and cornbread is really sucking me in! :o) it looks so delicious, that's because you put your heart into it..and felt like doing some real food cooking, not that fast pace that the restaurant cooking calls for...Glad you're putting some time in on the blog,I miss your post. Buttermilk, I keep forgetting about how yummy buttermilk in recipes can be. Boy, you do a lot of cooking and baking all day long and into the night. Your home must smell mouth-wateringly heavenly!

I've never tried buttermilk in a recipe unless it called for it. Cornbread sounds great, I'll have to make it sometime!

Oh yes, I do love to use buttermilk--it gives the most tender texture to baked goods - yep, my cornbread for sure! I have an old recipe in my great-grandmother's old handwritten collection of recipes for buttermilk pie. I'll have to compare it to your ingredient list. I've never made it, but I really will!!!

Buttermilk is a must for my pancakes, also for the biscuits which I try to make. And I can't think of anything better on a hot summer day than a cold glass of buttermilk with some chunks of hot cornbread right in the glass,and eaten with a long handled iced tea spoon. My husband liked it with sweet milk but it's better with buttermilk.I imagine you young ones are saying "what?"

Hello,

I've been following your blog for a while now & when I saw this post I knew I had to share.

I have lived without access to buttermilk for over a year now. So I've had to give up pancakes, biscuits, cornbread...you name it.

But surprisingly I found this the other day:
